What is Mennonite Sausage?
Mennonite sausage is a type of pork sausage made with a simple seasoning mix of salt and pepper. There are both smoked and fresh (non-smoked) versions of Mennonite sausage. Historically, Mennonites have found quite a variety of ways of smoking their pork sausage, ranging from suspending sausage over a straw fire out in a farm field to enclosed smokehouses burning sawdust or hardwood.
Summer sausage is sometimes also referred to as Mennonite sausage. It is a very different product. Summer sausage is eaten as a cold cut - similar to salami. Summer sausage is usually made with a combination of beef and pork.
